Spinach and Egg Stir-Fry Recipe

This quick and easy stir-fry is a delicious and nutritious way to enjoy spinach and eggs.

Ingredients:

  • 1 bunch of spinach, washed and roughly chopped
  • 2 large eggs, beaten
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Soy sauce or oyster sauce for extra flavor

Instructions:

  1. Heat the oil: Heat the olive oil in a large skillet or wok over medium heat.
  2. Sauté garlic: Add the minced garlic to the hot oil and cook until fragrant, about 30 seconds.
  3. Add spinach: Add the chopped spinach to the skillet and stir-fry until wilted, about 2-3 minutes.
  4. Make a well: Create a well in the center of the spinach.
  5. Cook eggs: Pour the beaten eggs into the well and cook until set, stirring occasionally.
  6. Combine: Gently fold the cooked eggs into the spinach.
  7. Season: Season with salt and pepper to taste.
  8. Serve: Serve immediately with rice or noodles.

Tips:

  • For extra flavor, add a dash of soy sauce or oyster sauce to the spinach while it’s cooking.
  • You can also add other vegetables to this stir-fry, such as mushrooms, onions, or bell peppers.
  • If you don’t have fresh spinach, you can use frozen spinach. Thaw it completely before cooking.
