1/2 cup of grated cheese (preferably cotija or cheddar)
1/4 cup of breadcrumbs
1/4 cup of finely chopped cilantro
1 small jalapeño, deseeded and finely chopped
1/4 teaspoon of chili powder
1/2 teaspoon of cumin
1 tablespoon of lime juice
Salt and pepper to taste
1 egg
1/4 cup of all-purpose flour
2 tablespoons of vegetable oil for frying
Instructions
In a large bowl, combine the corn kernels, grated cheese, breadcrumbs, cilantro, jalapeño, chili powder, cumin, lime juice, salt, and pepper.
Add the egg and stir until the mixture holds together. If needed, add a little flour to help the mixture bind.
Form small bite-sized balls or patties from the corn mixture.
Heat the vegetable oil in a skillet over medium heat.
Once the oil is hot, carefully place the corn bites into the pan, cooking in batches if necessary. Fry until golden and crispy, about 2-3 minutes per side.
Remove the bites from the skillet and place them on a paper towel-lined plate to drain excess oil.
Serve the spicy Mexican corn bites warm with a side of sour cream, guacamole, or salsa. Enjoy!
