Ingredients:
- 2 cups frozen corn kernels (thawed)
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 1/4 cup milk
- Vegetable oil for frying
Instructions:
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, cornstarch, chili powder, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Prepare Corn Mixture: In a separate bowl, combine the thawed corn with the beaten eggs and milk. Mix well to coat the corn evenly.
- Dredge in Dry Mixture: Pour the dry ingredients into a shallow dish. Dredge the corn mixture in the dry ingredients, making sure each piece is well coated.
- Fry: Heat about 1 inch of vegetable oil in a deep skillet or pot to 350°F (175°C). Carefully drop spoonfuls of the corn mixture into the hot oil. Fry for 2-3 minutes per batch, or until golden brown and crispy.
- Drain: Remove the corn bites from the oil with a slotted spoon and drain on paper towels to remove excess oil.
- Serve: Serve immediately with your favorite dipping sauce, such as ranch, honey mustard, or sriracha mayo.
Tips & Variations:
- For extra spice, add a pinch of red pepper flakes to the dry ingredients.
- You can also bake these corn bites in the oven. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spray with cooking spray. Arrange the corn bites on the baking sheet and bake for 15-20 minutes, or until golden brown and crispy.
