Spicy Butter Corn Bites Recipe

These crispy, golden corn bites are bursting with sweet corn flavor and a kick of spice. Perfect as an appetizer, snack, or side dish!

Ingredients:

  • For the Corn Bites:
    • 2 cups frozen or canned corn (drained if using canned)
    • 1/2 cup all-purpose flour
    • 1/4 cup cornstarch
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
    • 1/4 cup milk (or non-dairy milk)
    • 1 large egg
    • Vegetable oil, for frying
  • For the Spicy Butter Sauce:
    • 4 tablespoons butter
    • 1 tablespoon hot sauce (such as Sriracha or your favorite)
    • 1 teaspoon chili powder.
    • 1/2 teaspoon smoked paprika.
    • 1 tablespoon honey or maple syrup (optional, for sweetness)
    • 1 tablespoon lime juice.
    • Chopped fresh cilantro or parsley, for garnish (optional)

Instructions:

  1. Prepare the Corn Mixture:
    • If using frozen corn, thaw it. Drain any excess liquid from the corn.
    • In a large bowl, combine the flour, cornstarch, baking powder, salt, black pepper, garlic powder, and cayenne pepper. Whisk to combine.
    • In a separate bowl, whisk together the milk and egg.
    • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.  
    • Gently fold in the corn kernels.
  2. Fry the Corn Bites:
    • Heat about 2 inches of vegetable oil in a deep fryer or large skillet over medium-high heat (350°F/175°C).
    • Using a small cookie scoop or two spoons, carefully drop small portions of the corn mixture into the hot oil.
    • Fry the corn bites in batches, ensuring they have enough space to cook evenly.
    • Cook for 3-5 minutes, or until golden brown and crispy.
    • Remove the corn bites with a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.
  3. Make the Spicy Butter Sauce:
    • In a small saucepan, melt the butter over medium-low heat.
    • Add the hot sauce, chili powder, and smoked paprika. Stir to combine.
    • If you would like to add a touch of sweetness, stir in the honey or maple syrup.
    • Add the lime juice, and stir.
    • Remove the saucepan from the heat.
  4. Assemble and Serve:
    • Place the fried corn bites in a bowl.
    • Pour the spicy butter sauce over the corn bites and toss gently to coat.
    • Garnish with chopped cilantro or parsley, if desired.
    • Serve immediately and enjoy!
