Southern Strawberry Sweet Tea for this Hot Summer

Ingredients

  • 4 cups fresh strawberries, hulled and sliced
  • 1 ½ cups granulated sugar (adjust to taste)
  • 8 cups water, divided
  • 6 black tea bags (or your favorite tea)
  • 1 lemon, sliced (optional)
  • Fresh mint leaves (optional)
  • Ice cubes

Instructions

  1. In a medium saucepan, combine strawberries, sugar, and 2 cups of water. Bring to a boil over medium heat, stirring occasionally until the strawberries are soft and the sugar has dissolved (about 10 minutes).
  2. Remove from heat and mash the strawberries gently with a spoon or potato masher. Strain the mixture through a fine mesh sieve into a bowl or pitcher to remove the pulp. Discard the solids and let the syrup cool.
  3. Meanwhile, bring the remaining 6 cups of water to a boil. Remove from heat, add the tea bags, and let steep for 5–7 minutes (longer for stronger tea). Remove the tea bags and let the tea cool slightly.
  4. Pour the tea into a large pitcher. Add the cooled strawberry syrup and stir well. Chill in the fridge for at least an hour.
  5. Serve over ice with fresh lemon slices and mint leaves if desired.
