Southern Meatloaf

Ingredients:

  • 1 ½ lbs ground beef (or mix of beef and pork)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup ketchup (plus extra for topping)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon dried thyme

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, soak breadcrumbs in milk for 5 minutes.
  3. Add ground meat, onion, garlic, egg, ketchup, Worcestershire sauce, salt, pepper, paprika, and thyme. Mix gently until combined.
  4. Shape mixture into a loaf and place in a greased baking dish or loaf pan.
  5. Spread a thin layer of ketchup over the top.
  6. Bake for 60–70 minutes, or until meatloaf reaches an internal temperature of 160°F (71°C).
  7. Let rest for 10 minutes before slicing.

Tips:

  • For extra flavor, sauté onions and garlic before mixing.
  • Use a mix of beef and pork for a juicier meatloaf.
  • Leftovers make great sandwiches!
  • Add a little brown sugar or honey to the ketchup topping for a sweet glaze.
