Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder (for batter)
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened cocoa powder (for topping)
  • 1 3/4 cups boiling water

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish.
  2. Prepare the Batter:
    • In a medium mixing bowl, combine the flour, baking powder, salt, granulated sugar, and 2 tablespoons of cocoa powder.
    • Stir in the milk, melted butter, and vanilla extract until the mixture is smooth.
    • Pour the batter evenly into the prepared baking dish.
  3. Add the Topping:
    • In a separate bowl, mix the brown sugar and 1/4 cup cocoa powder. Sprinkle this mixture evenly over the batter.
  4. Pour the Water:
    • Slowly pour the boiling water over the entire dish. Do not stir; the water will create a self-saucing layer as it bakes.
  5. Bake:
    • Bake in the preheated oven for 35–40 minutes or until the top is set and firm but the bottom layer remains gooey.
  6. Serve:
    • Let the cobbler cool for 5–10 minutes before serving. The chocolate sauce will thicken as it sits. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for the perfect dessert!
