Ingredients:
- 1 cup (225g) unsalted butter, softened
- 4 oz (115g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ½ cups (315g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- Powdered sugar (optional, for dusting)
Instructions:
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the butter and cream cheese in a large mixing bowl until smooth and well-combined, about 2 minutes.
- Add the sugar and beat until light and fluffy, around 3 minutes. Scrape down the sides of the bowl as needed.
- Mix in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms. Avoid overmixing.
- Scoop dough using a tablespoon and roll into small balls. Place on the prepared baking sheets, spacing them about 2 inches apart.
- Lightly press down each dough ball with the back of a spoon or your fingers to flatten slightly.
- Bake for 10-12 minutes, or until the edges are just golden. The centers should remain soft and pale.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Optional: Dust with powdered sugar for an extra touch of sweetness.
