Ingredients
- 3 ripe bananas (for natural sweetness)
- 3 large eggs
- 1/2 cup almond flour or oat flour (optional for texture, but still flour-free by traditional standards)
- 1/2 cup Greek yogurt (for moisture)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a small cake pan with parchment paper.
- In a mixing bowl, mash the bananas until smooth.
- Add eggs, Greek yogurt, and vanilla extract. Mix well until combined.
- Stir in almond/oat flour (if using), baking powder, cinnamon, and salt. Mix until you get a smooth batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25–30 minutes, or until the center is set and a toothpick comes out clean.
- Let cool slightly before slicing. Enjoy warm or chilled!
