  • 3 ripe bananas (for natural sweetness)
  • 3 large eggs
  • 1/2 cup almond flour or oat flour (optional for texture, but still flour-free by traditional standards)
  • 1/2 cup Greek yogurt (for moisture)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a small cake pan with parchment paper.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add eggs, Greek yogurt, and vanilla extract. Mix well until combined.
  4. Stir in almond/oat flour (if using), baking powder, cinnamon, and salt. Mix until you get a smooth batter.
  5. Pour the batter into the prepared cake pan and smooth the top.
