- 2 cups cooked rice (preferably chilled)
- 2 eggs
- 2 tbsp oil (vegetable or sesame)
- 1 small onion, finely chopped
- 2-3 garlic cloves, minced
- 1/2 cup mixed vegetables (carrots, peas, corn) – optional
- 2-3 tbsp soy sauce
- Salt and pepper to taste
- Spring onions or cilantro for garnish
Instructions
- Heat oil in a large pan or wok over medium heat.
- Add chopped onion and garlic; sauté until fragrant and lightly golden.
- Push the onions to one side, crack the eggs into the pan, and scramble until fully cooked.
- Add the cooked rice and mixed vegetables (if using) to the pan. Stir-fry everything together for 3-5 minutes.
- Drizzle soy sauce over the rice, season with salt and pepper, and mix well to coat evenly.
- Cook for another 2 minutes, stirring occasionally, until heated through.
- Garnish with chopped spring onions or cilantro and serve hot.
