Snow Skin Mooncakes are a delicate and soft variation of traditional mooncakes, typically enjoyed during the Mid-Autumn Festival. Unlike baked mooncakes, these mooncakes have a chewy, mochi-like exterior made from glutinous rice flour, filled with various sweet fillings such as red bean, lotus paste, or custard. They are best served chilled, providing a refreshing and light treat.


Ingredients

For the Snow Skin:

  • 100g glutinous rice flour
  • 50g rice flour
  • 25g cornstarch
  • 50g powdered sugar
  • 30g coconut milk
  • 150ml water
  • 30g vegetable oil
  • Extra glutinous rice flour for dusting

For the Filling (choose one or mix multiple):

  • 200g red bean paste
  • 200g lotus seed paste
  • 200g custard filling
  • Optional: nuts, seeds, or dried fruits for added texture

Food coloring (optional)


Instructions

  1. Prepare the Snow Skin Dough:
  • In a large mixing bowl, combine the glutinous rice flour, rice flour, cornstarch, and powdered sugar.
  • Slowly add the coconut milk, water, and vegetable oil. Stir until smooth.
  • Strain the mixture to remove lumps, then pour it into a heatproof bowl.
  1. Steam the Dough:
  • Steam the mixture over medium heat for 20-25 minutes until it becomes a translucent, dough-like consistency.
  • Once steamed, let it cool for a few minutes, then knead the dough until smooth and elastic.
  1. Prepare the Filling:
  • While the dough cools, divide your chosen filling into small, equal portions (about 25g each) and roll them into balls.
  • If adding nuts, seeds, or dried fruits, mix them into the filling before rolling.
  1. Assemble the Mooncakes:
  • Lightly dust your work surface with glutinous rice flour to prevent sticking.
  • Divide the dough into equal portions (around 30g each), roll each portion into a ball, and then flatten it into a round disc.
  • Place a filling ball in the center of the flattened dough. Gently wrap the dough around the filling and pinch the edges to seal it.
  1. Shape the Mooncakes:
  • Lightly dust a mooncake mold with glutinous rice flour to prevent sticking.
  • Place the filled mooncake dough into the mold and press gently to shape it.
  • Carefully remove the mooncake from the mold and repeat with the remaining dough and filling.
  1. Chill and Serve:
  • Place the mooncakes in the refrigerator for at least 1-2 hours to firm up and allow the flavors to meld.
  • Serve chilled and enjoy!
