Smothered Pork Chops with Potatoes in Gravy


INGREDIENTS

For the Pork Chops:

  • 4 bone-in or boneless pork chops
  • Salt & black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tbsp oil (vegetable or olive oil)

For the Potatoes & Gravy:

  • 4 medium potatoes, peeled and sliced
  • 1 medium onion, thinly sliced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk or heavy cream
  • 1 tsp Worcestershire sauce
  • Salt & pepper, to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Season the Pork Chops:
    Pat pork chops dry and season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  2. Sear the Chops:
    In a large skillet, heat oil over medium-high heat. Sear pork chops for 2–3 minutes per side until browned (they don’t need to be cooked through yet). Remove and set aside.
  3. Cook Onions & Potatoes:
    In the same pan, add butter and sauté sliced onions until soft. Add sliced potatoes and cook for 5 minutes, stirring occasionally.
  4. Make the Gravy:
    Sprinkle flour over onions and potatoes, stir well, and cook for 1–2 minutes. Slowly whisk in chicken broth and milk. Add Worcestershire sauce, and season with salt and pepper. Let simmer until slightly thickened.
  5. Smother and Simmer:
    Nestle pork chops back into the skillet over the potatoes. Reduce heat to low, cover, and cook for 25–30 minutes or until pork is tender and potatoes are cooked through.
  6. Garnish and Serve:
    Sprinkle with chopped parsley if desired. Serve hot with warm bread or green beans on the side.
