Ingredients:
- 2.5 lbs chicken wings, tips removed
- 1/4 cup your favorite dry rub (or use a pre-made rub)
- 1 tablespoon olive oil
- Wood chips (hickory, mesquite, or apple)
Instructions:
- Prepare the wings: Pat the chicken wings dry with paper towels. In a large bowl, toss the wings with olive oil and your chosen dry rub until evenly coated.
- Prepare the smoker: Preheat your smoker to 225°F (107°C). Add your desired wood chips to the smoker box.
- Smoke the wings: Place the wings on the smoker grates, making sure they are not touching. Close the lid and smoke for 1 hour to 1.5 hours, or until the internal temperature reaches 165°F (74°C).
- Increase the heat: Increase the smoker temperature to 400°F (204°C) and continue cooking for an additional 10-15 minutes, or until the wings are crispy and the skin is golden brown.
