- 1 cup shredded cheddar cheese
- 2 fresh jalapeños (seeded & finely chopped)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 4 strips of smoked bacon (optional, for wrapping)
- 2 tbsp olive oil or butter
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a bowl, mix cream cheese, cheddar, jalapeños, smoked paprika, garlic powder, onion powder, salt, and pepper until creamy.
- Place chicken breast slices on a flat surface. Spread a generous spoonful of the cheese-jalapeño filling onto each piece.
- Roll up tightly and secure with toothpicks. (Optional: wrap each roll with a strip of bacon for extra smokiness).
- Heat a skillet with olive oil or butter. Sear the rolls on all sides until golden brown.
- Transfer to the baking dish and bake for 20–25 minutes until chicken is cooked through (internal temp 165°F / 74°C).
