- 4 medium russet potatoes, peeled and sliced into thin rounds
- 14 oz smoked sausage, sliced into ½-inch pieces
- 1 medium onion, finely chopped
- 1 red bell pepper, diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 tablespoon olive oil
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or nonstick spray.
- In a skillet, heat olive oil over medium heat. Add smoked sausage and cook for 3–4 minutes until lightly browned. Remove from pan and set aside.
- In the same skillet, melt butter, then add flour and whisk to form a roux. Slowly pour in milk, whisking constantly until the sauce thickens. Add garlic powder, smoked paprika, salt, and pepper. Stir in half of the shredded cheese and mix until smooth.
- Arrange a layer of sliced potatoes in the baking dish, followed by sausage, onions, and bell peppers. Pour a portion of the sauce over the top. Repeat layering until all ingredients are used, finishing with sauce and the remaining cheese.
- Cover the dish with foil and bake for 40 minutes. Remove foil and bake an additional 15–20 minutes, or until the top is golden and potatoes are fork-tender.
