Smoked Brisket & Beer Cheese Pretzel Bombs

Ingredients

  • 2 cups cooked smoked brisket, chopped or shredded
  • 1 cup beer cheese dip (store-bought or homemade)
  • 1 can refrigerated pizza dough or pretzel dough (or homemade pretzel dough)
  • 2 tbsp melted butter
  • 1 tbsp coarse salt (pretzel salt or kosher salt)
  • 1 tbsp baking soda (for water bath, if making homemade pretzel dough)
  • 4 cups water (for water bath, if making homemade pretzel dough)
  • Optional: Dijon mustard or extra beer cheese, for dipping

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare Filling: In a bowl, mix chopped smoked brisket with beer cheese until well combined.
  3. Divide Dough: Roll out the dough and cut it into 12 equal squares or circles, depending on your preferred shape.
  4. Fill & Seal: Place a spoonful of the brisket-beer cheese mixture in the center of each piece of dough. Bring the edges up and pinch tightly to seal, forming a ball.
  5. Pretzel Bath (Optional): If you want true pretzel texture, bring 4 cups of water and 1 tbsp baking soda to a gentle boil. Carefully dip each dough ball in the water for about 20–30 seconds, then remove and place on the baking sheet.
  6. Brush & Salt: Brush each bomb with melted butter and sprinkle with coarse salt.
  7. Bake: Bake for 12–15 minutes, or until golden brown and cooked through.
  8. Serve: Serve warm with extra beer cheese or mustard for dipping.
