Small No-Bake Vanilla Pudding recipe

INGREDIENTS

  • 2 cups whole milk
  • ¼ cup granulated sugar
  • 3 tbsp cornstarch
  • ⅛ tsp salt
  • 1½ tsp pure vanilla extract
  • 1 tbsp unsalted butter

(Optional toppings: whipped cream, fresh berries, crushed cookies)

Instructions

  1. Mix dry ingredients:
In a medium saucepan (off the heat), whisk together the sugar, cornstarch, and salt.
  2. Add milk:
Slowly add in the milk while whisking to ensure there are no lumps.
  3. Cook:
Place the saucepan over medium heat. Stir constantly with a whisk or spoon until the mixture thickens and starts to bubble — about 5–7 minutes.
  4. Add flavor:
Once thickened, remove from heat. Stir in the butter and vanilla extract until smooth.
  5. Chill:
Pour the pudding into small serving cups or bowls. Let it cool at room temperature for 10 minutes, then refrigerate for at least 1 hour.
  6. Serve:
Top with whipped cream, berries, or crushed cookies if desired. Enjoy!
