Slow Cooker Honey Parmesan

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tbsp Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger (optional for a hint of warmth)
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional for a little heat)
  • Fresh parsley (for garnish)

Instructions

  1. Prep the Chicken: Place the chicken breasts at the bottom of the slow cooker.
  2. Make the Sauce: In a bowl, whisk together honey, soy sauce, Dijon mustard, olive oil, minced garlic, ginger, black pepper, and red pepper flakes (if using).
  3. Pour the Sauce: Pour the sauce mixture over the chicken breasts in the slow cooker.
  4. Slow Cook: Cover and cook on low for 4-5 hours or until the chicken is tender and cooked through.
  5. Add Parmesan: About 15 minutes before serving, sprinkle the grated Parmesan cheese over the chicken. Allow it to melt into the sauce as the chicken finishes cooking.
  6. Serve: Once done, remove the chicken from the slow cooker and serve with a drizzle of sauce. Garnish with fresh parsley for a touch of color.
