Slow Cooker Creamy Alfredo Pasta

Ingredients

  • 1 lb fettuccine or penne pasta
  • 2 cups heavy cream
  • 1 ½ cups grated Parmesan cheese
  • 1 ½ cups shredded mozzarella cheese
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 lb boneless, skinless chicken breast (optional, cut into cubes)
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • 1 cup milk
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the slow cooker: Lightly grease the inside of your slow cooker with butter or cooking spray.
  2. Add ingredients: Place the chicken (if using), heavy cream, chicken broth, garlic, salt, pepper, Italian seasoning, and butter into the slow cooker. Stir to combine.
  3. Cook the base: Cover and cook on LOW for 3-4 hours or until the chicken is fully cooked and tender.
  4. Shred the chicken (if used): Once cooked, remove the chicken and shred it with two forks. Return it to the slow cooker.
  5. Add pasta & cheese: Stir in the uncooked pasta, Parmesan, and mozzarella cheese. Add milk and mix well.
  6. Final cooking: Cover and cook for an additional 30-45 minutes on LOW, stirring occasionally until the pasta is tender and the sauce is thick and creamy.
  7. Serve & garnish: Stir well, adjust seasoning if needed, and garnish with fresh parsley. Serve hot and enjoy!
