A deliciously creamy and cheesy potato dish, perfect for any occasion. These slow-cooker cheesy potatoes are the ultimate comfort food, combining tender potatoes with a rich and gooey cheese sauce. This dish is easy to make and ideal for gatherings or weeknight dinners.
Ingredients
- 2 lbs (about 5-6 medium) russet potatoes, peeled and diced
- 1 ½ cups shredded cheddar cheese
- 1 cup sour cream
- 1 can (10.5 oz) condensed cream of chicken soup
- ½ cup diced onions
- ¼ cup butter, melted
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions
- Prep the Potatoes: Start by peeling and dicing the potatoes into bite-sized pieces. Set aside.
- Mix the Sauce: In a medium bowl, combine the sour cream, condensed cream of chicken soup, melted butter, shredded cheddar cheese, diced onions, garlic powder, salt, and pepper. Stir until well mixed.
- Assemble in the Slow Cooker: Spray the inside of your slow cooker with non-stick cooking spray. Add the diced potatoes, then pour the cheese mixture over the top. Gently stir to ensure the potatoes are well-coated.
- Cook: Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the potatoes are tender and the cheese is bubbly.
- Stir and Serve: Once done, stir everything well. Optionally, sprinkle with more shredded cheese and cook for an additional 10-15 minutes to melt the topping.
- Garnish: Serve warm, garnished with chopped parsley or chives.
Enjoy your creamy, cheesy slow-cooker potatoes!
