Sliced Baked Potatoes Recipe

This recipe offers a twist on the classic baked potato, with crispy edges and a fluffy interior. Perfect as a side dish or a light meal.

Ingredients:

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh chives (optional)
  • Sour cream, Greek yogurt, or butter for serving
  • Your favorite toppings: shredded cheese, bacon bits, chopped green onions, diced chives, etc.

Instructions:

  1. Prep the Potatoes:
    • Wash the potatoes thoroughly.
    • Slice each potato lengthwise into 1/4-inch thick slices, leaving them connected at the bottom.
  2. Season:
    • Place the potatoes in a large bowl.
    • Drizzle with olive oil and toss to coat.
    • Season with salt and pepper.
  3. Bake:
    • Place the potatoes on a baking sheet lined with parchment paper.
    • Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until the potatoes are tender and the edges are golden brown and crispy.
  4. Serve:
    • Remove from the oven and let cool slightly.
    • Top with chives, if using.
    • Serve immediately with your favorite toppings and sour cream, Greek yogurt, or butter.

Tips & Variations:

  • For extra flavor, add garlic powder, onion powder, or smoked paprika to the potatoes.
  • You can also roast the potatoes with herbs like rosemary or thyme.  
  • For a vegetarian option, use vegan cheese and dairy-free yogurt.
  • To make these ahead of time, bake the potatoes and store them in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or microwave before serving.
