A classic Chinese-American stir-fry featuring tender slices of beef, vibrant bell peppers, and sweet onions, all coated in a savory brown sauce. Perfect for a quick and flavorful weeknight meal.
Ingredients:
- For the Beef Marinade:
- 1 pound flank steak or sirloin steak, thinly sliced against the grain
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 teaspoon of sesame oil
- 1/2 teaspoon of ground black pepper
- For the Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- 1 cup of beef broth
- 1 teaspoon of sesame oil
- 1/2 teaspoon of ground white pepper(optional)
- For the Stir-Fry:
- 2 tablespoons vegetable oil
- 1 large yellow onion, sliced
- 2 bell peppers (1 red, 1 green), sliced
- 2 cloves garlic, minced
- 1 inch piece of ginger, minced.
Instructions:
- Marinate the Beef:
- In a medium bowl, combine the sliced beef, 1 tablespoon soy sauce, 1 tablespoon cornstarch, 1 tablespoon vegetable oil, sesame oil and black pepper.
- Mix well and let it marinate for at least 20 minutes, or up to 1 hour in the refrigerator.
- Prepare the Sauce:
- In a small bowl, whisk together the 2 tablespoons soy sauce, oyster sauce, brown sugar, 1 tablespoon cornstarch, beef broth, sesame oil, and white pepper (if using). Set aside.
- Stir-Fry the Vegetables:
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat.
- Add the sliced onions and stir-fry for 2-3 minutes, until slightly softened.
- Add the sliced bell peppers, minced garlic, and minced ginger. Stir-fry for another 2-3 minutes, until the peppers are tender-crisp.
- remove the cooked vegetables from the wok and set aside.
- Cook the Beef:
- In the same skillet or wok, add the marinated beef.
- Stir-fry over high heat for 2-3 minutes, or until the beef is browned and cooked through.
- Remove any excess liquid from the wok.
- Combine and Simmer:
- Return the cooked vegetables to the skillet with the beef.
- Pour the prepared sauce over the beef and vegetables.
- Stir continuously until the sauce thickens and coats the ingredients, about 1-2 minutes.
- Serve:
- Serve the sizzling Chinese pepper steak with onions immediately over steamed rice.
Tips and Variations:
- For extra heat, add a pinch of red pepper flakes to the sauce or stir-fry.
- You can use other vegetables, such as mushrooms, broccoli, or snow peas.
- If you do not have oyster sauce, you can add an additional tablespoon of soy sauce, and a half teaspoon of brown sugar.
- For a thicker sauce, create a slurry of 1 teaspoon of cornstarch and 1 tablespoon of cold water, then add it to the sauce while simmering.
- Make sure your wok or pan is very hot before adding the beef so that it sears quickly.
- If you do not have beef broth, chicken broth can be substituted.
