- 3 tbsp cornstarch
- 1/4 tsp ground cinnamon
- 1/4 tsp vanilla extract

Instructions
- In a medium saucepan, combine the milk, sugar, cornstarch, ground cinnamon, and a pinch of salt. Whisk together to combine the dry ingredients with the milk.
- Place the saucepan over medium heat, and cook the mixture, whisking constantly until it begins to thicken (around 5-7 minutes).
- Once thickened, reduce the heat to low. If you’re using an egg for extra richness, beat the egg in a small bowl and temper it by slowly adding a little of the hot mixture into the egg while whisking constantly. Then, slowly stir the tempered egg back into the pudding. Continue to cook for another 2-3 minutes until the pudding is creamy and smooth.
- Remove from heat and stir in the vanilla extract.
- Pour the pudding into serving bowls or cups and let it cool to room temperature. You can refrigerate it for 2-3 hours for a chilled version.
- Garnish with a sprinkle of cinnamon on top before serving.
