  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil

  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes, seasoning them with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.
