Ingredients:
- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes, seasoning them with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.
