Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ears of corn, cut into 4 pieces each
- 1 lb baby potatoes, halved
- 12 oz smoked sausage, sliced
- 2 tbsp olive oil or melted butter
- 1 tbsp Old Bay seasoning (or Cajun seasoning)
- 1 tsp garlic powder
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
- Heavy-duty aluminum foil
Instructions
- Preheat Oven or Grill:
Preheat the oven to 425°F (220°C) or heat the grill to medium-high heat. - Parboil Potatoes:
Boil baby potatoes in salted water for about 10 minutes until just tender. Drain and let cool slightly. - Assemble Foil Packs:
Tear 4 large sheets of foil. Evenly divide shrimp, corn pieces, parboiled potatoes, and sausage slices between each sheet. - Season and Toss:
Drizzle olive oil or melted butter over each pack. Sprinkle with Old Bay seasoning, garlic powder, salt, and pepper. Toss gently to coat all ingredients. - Seal the Packs:
Fold the foil over the ingredients and seal the edges to form a packet. Leave a little space inside for heat circulation. - Cook:
- Grill: Place packets on the grill and cook for 15–20 minutes, flipping once halfway through.
- Oven: Place packets on a baking sheet and bake for 20–25 minutes.
- Serve:
Carefully open the foil packs (watch for steam!), garnish with chopped parsley, and serve with lemon wedges.
