Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 lb smoked sausage, sliced into rounds
- 2 cups baby potatoes, halved
- 2 ears of corn, cut into thirds
- 2 tbsp olive oil or melted butter
- 2 tsp Old Bay seasoning (or Cajun seasoning)
- 1 tsp garlic powder
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
- Heavy-duty aluminum foil
Instructions
- Preheat your grill to medium-high heat, or preheat oven to 400°F (200°C).
- In a large bowl, combine shrimp, sausage, potatoes, and corn. Drizzle with olive oil or melted butter, then sprinkle with Old Bay, garlic powder, salt, and pepper. Toss until evenly coated.
- Cut 4 large pieces of heavy-duty foil. Evenly divide the mixture among the foil sheets and fold them up into secure packets.
- Place foil packs on the grill (or a baking sheet if using the oven). Cook for about 15–20 minutes, flipping halfway through if grilling, until potatoes are tender and shrimp are cooked through.
- Carefully open the foil packs (watch for steam). Garnish with chopped parsley and serve with fresh lemon wedges.
