Shrimp, Corn, Potatoes, and Smoked Sausage Foil Pack

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 lb smoked sausage, sliced into rounds
  • 2 cups baby potatoes, halved
  • 2 ears of corn, cut into thirds
  • 2 tbsp olive oil or melted butter
  • 2 tsp Old Bay seasoning (or Cajun seasoning)
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving
  • Heavy-duty aluminum foil

Instructions

  1. Preheat your grill to medium-high heat, or preheat oven to 400°F (200°C).
  2. In a large bowl, combine shrimp, sausage, potatoes, and corn. Drizzle with olive oil or melted butter, then sprinkle with Old Bay, garlic powder, salt, and pepper. Toss until evenly coated.
  3. Cut 4 large pieces of heavy-duty foil. Evenly divide the mixture among the foil sheets and fold them up into secure packets.
  4. Place foil packs on the grill (or a baking sheet if using the oven). Cook for about 15–20 minutes, flipping halfway through if grilling, until potatoes are tender and shrimp are cooked through.
  5. Carefully open the foil packs (watch for steam). Garnish with chopped parsley and serve with fresh lemon wedges.
