Shrimp and Sausage Foil Packet Dinner

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced into coins
  • 2 ears of corn, each cut into 4 pieces
  • 1 lb baby potatoes, halved
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 tablespoon Old Bay seasoning (or Cajun seasoning)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)
  • Heavy-duty aluminum foil

Instructions

  1. Preheat your grill to medium-high heat (about 400°F), or preheat oven to 425°F.
  2. Parboil Potatoes: Boil baby potatoes for about 8 minutes until slightly tender but not fully cooked. Drain and let cool slightly.
  3. Mix Ingredients: In a large bowl, combine shrimp, sausage, parboiled potatoes, corn pieces, bell peppers, and red onion.
  4. Season: Drizzle with olive oil and sprinkle in Old Bay seasoning, garlic powder, salt, and pepper. Toss well to coat.
  5. Assemble Packets: Cut 4 large pieces of aluminum foil (about 12×18 inches). Divide the mixture evenly among the foil pieces. Fold the foil over the mixture and seal tightly to form packets.
  6. Cook:
    • Grill: Place packets on the grill and cook for 15–20 minutes, flipping once halfway through.
    • Oven: Bake packets on a baking sheet for 20–25 minutes.
  7. Serve: Carefully open packets (watch out for steam!). Garnish with chopped parsley and serve with lemon wedges.

Let me know if you want a spicy version or one with butter and garlic!
