Ingredients
- 1 lb large shrimp, peeled and deveined
- 12 oz smoked sausage, sliced into coins
- 2 ears of corn, each cut into 4 pieces
- 1 lb baby potatoes, halved
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, sliced
- 3 tablespoons olive oil
- 1 tablespoon Old Bay seasoning (or Cajun seasoning)
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
- Heavy-duty aluminum foil
Instructions
- Preheat your grill to medium-high heat (about 400°F), or preheat oven to 425°F.
- Parboil Potatoes: Boil baby potatoes for about 8 minutes until slightly tender but not fully cooked. Drain and let cool slightly.
- Mix Ingredients: In a large bowl, combine shrimp, sausage, parboiled potatoes, corn pieces, bell peppers, and red onion.
- Season: Drizzle with olive oil and sprinkle in Old Bay seasoning, garlic powder, salt, and pepper. Toss well to coat.
- Assemble Packets: Cut 4 large pieces of aluminum foil (about 12×18 inches). Divide the mixture evenly among the foil pieces. Fold the foil over the mixture and seal tightly to form packets.
- Cook:
- Grill: Place packets on the grill and cook for 15–20 minutes, flipping once halfway through.
- Oven: Bake packets on a baking sheet for 20–25 minutes.
- Serve: Carefully open packets (watch out for steam!). Garnish with chopped parsley and serve with lemon wedges.
