Scotcheroo Bars recipe

Ingredients

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 6 cups crispy rice cereal (like Rice Krispies)
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Prepare your pan
    Lightly grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  2. Heat the sugar & syrup
    In a large saucepan over medium heat, stir together the corn syrup and sugar. Heat just until the mixture begins to bubble—do not boil.
  3. Add the peanut butter
    Remove from heat and immediately stir in the peanut butter until smooth and well combined.
  4. Mix with cereal
    Gently stir in the crispy rice cereal until evenly coated.
  5. Press into pan
    Pour the mixture into your prepared pan and press it down evenly using a spatula or wax paper.
  6. Melt the chips
    In a microwave-safe bowl, combine the chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring in between, until smooth and fully melted.
  7. Spread the topping
    Pour the melted chocolate-butterscotch mixture over the cereal layer and spread evenly.
  8. Cool & set
    Let the bars cool at room temperature (or place in the fridge for faster setting) until the top is firm.
  9. Slice & serve
    Cut into squares or bars and enjoy!
