Scones (10 Cups of Flour)


Ingredients

  • 10 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 6 tablespoons baking powder
  • 2 teaspoons salt
  • 2 cups cold butter (unsalted, cubed)
  • 4 large eggs
  • 3 cups milk or heavy cream
  • 1 tablespoon vanilla extract
  • Optional: 2 cups raisins, chocolate chips, berries, or shredded cheese (savory)
  • Optional: Egg wash (1 egg beaten with 1 tbsp milk)

Instructions

  1. Preheat oven to 400°F (200°C). Line baking trays with parchment paper.
  2. Mix dry ingredients: In a very large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in butter: Add the cubed butter into the flour mixture. Use a pastry cutter or your fingers to rub it in until it resembles coarse crumbs.
  4. Mix wet ingredients: In a separate bowl, whisk together eggs, milk/cream, and vanilla extract.
  5. Combine: Pour wet mixture into dry ingredients. Stir gently until just combined. Do not overmix. Fold in any optional add-ins.
  6. Shape the scones: Turn dough onto a floured surface. Divide into portions and pat each into a round disc about ¾–1 inch thick. Cut each disc into 8 wedges or use a round cutter.
  7. Place on tray: Transfer scones onto prepared baking sheets. Leave some space between each.
  8. Optional: Brush tops with egg wash for a golden finish.
  9. Bake for 18–22 minutes, or until golden brown and a toothpick comes out clean.
  10. Cool slightly before serving. Serve warm with butter, jam, or clotted cream.
