1 1/2 cups shredded cheddar cheese (or your choice of cheese)
Salt and pepper, to taste
1/4 teaspoon paprika (optional)
Fresh parsley, chopped (for garnish)
Instructions
Preheat Oven and Prepare Baking Dish: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
Cook the Sauce: In a medium saucepan, melt the butter over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant, about 3-4 minutes. Pour in the heavy cream and milk, stirring to combine. Let it come to a simmer, then reduce the heat to low. Add the shredded cheese and stir until melted and smooth. Season with salt, pepper, and paprika (if using).
Assemble the Roll: Lay the thinly sliced potatoes out in a large single layer. Spoon a small amount of the creamy sauce onto each slice of potato. Carefully roll each slice tightly, placing them seam-side down in the prepared baking dish.
Bake: Pour the remaining sauce over the rolled-up potatoes. Cover with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender.
Finish and Serve: Once cooked, remove the foil and bake for an additional 10 minutes to allow the top to crisp up slightly. Remove from the oven and let it cool slightly before serving. Garnish with fresh chopped parsley and enjoy!
