Scallion Pancakes with Cheese Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup boiling water
  • 1/4 cup vegetable oil (for dough)
  • 1/2 teaspoon salt
  • 1/2 cup scallions (finely chopped)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • Vegetable oil (for frying)

Instructions

  1. In a large mixing bowl, combine the flour and salt. Gradually add the boiling water, stirring with a fork or chopsticks until the mixture comes together.
  2. Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
  3. After resting, divide the dough into 4 equal portions. Roll each portion into a ball.
  4. Roll out one ball of dough into a thin circle on a floured surface, about 6-8 inches in diameter.
  5. Brush a thin layer of vegetable oil on the surface of the dough. Sprinkle some chopped scallions and shredded cheese evenly over the dough.
  6. Roll the dough into a tight log and then coil it into a ball. Flatten the ball gently with your hands or a rolling pin to form a round pancake.
  7. Heat a skillet over medium-high heat and add a little vegetable oil. Fry the pancake for 2-3 minutes on each side, until golden brown and crispy.
  8. Repeat with the remaining dough portions.
  9. Once all pancakes are fried, cut them into wedges and serve hot.

Enjoy your crispy and cheesy scallion pancakes!
