Ingredients
- 2 cups all-purpose flour
- 1/2 cup boiling water
- 1/4 cup vegetable oil (for dough)
- 1/2 teaspoon salt
- 1/2 cup scallions (finely chopped)
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- Vegetable oil (for frying)
Instructions
- In a large mixing bowl, combine the flour and salt. Gradually add the boiling water, stirring with a fork or chopsticks until the mixture comes together.
- Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
- After resting, divide the dough into 4 equal portions. Roll each portion into a ball.
- Roll out one ball of dough into a thin circle on a floured surface, about 6-8 inches in diameter.
- Brush a thin layer of vegetable oil on the surface of the dough. Sprinkle some chopped scallions and shredded cheese evenly over the dough.
- Roll the dough into a tight log and then coil it into a ball. Flatten the ball gently with your hands or a rolling pin to form a round pancake.
- Heat a skillet over medium-high heat and add a little vegetable oil. Fry the pancake for 2-3 minutes on each side, until golden brown and crispy.
- Repeat with the remaining dough portions.
- Once all pancakes are fried, cut them into wedges and serve hot.
