INSTRUCTIONS
- In a large bowl, combine cucumber slices, cherry tomatoes, and red onion.
- In a small bowl, whisk together olive oil, vinegar (or lemon juice), salt, and pepper.
- Pour the dressing over the veggies and toss gently to coat.
- Sprinkle with chopped parsley or dill. Add feta if using.
- Chill for 10–15 minutes before serving for best flavor.
