Ingredients
- 1 lb (450g) ground turkey
- 6 cups bread cubes (day-old or toasted)
- 1 medium onion, finely diced
- 2 stalks celery, finely diced
- 2 cloves garlic, minced
- 1 apple, peeled and finely chopped (Granny Smith or Honeycrisp recommended)
- 1/2 cup dried cranberries or raisins
- 1/4 cup fresh parsley, chopped
- 1 tsp dried sage
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken or turkey broth
- 1 egg, beaten
- 2 tbsp butter
- Olive oil spray or melted butter (for drizzling)
Instructions
- Preheat Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease with non-stick spray. - Sauté Veggies:
In a large skillet, melt the butter over medium heat. Add the diced onion, celery, and garlic. Sauté for about 5 minutes or until softened. Add the chopped apple and cook for an additional 2-3 minutes until tender. - Mix Ingredients:
In a large mixing bowl, combine the bread cubes, sautéed veggies, ground turkey, dried cranberries, fresh parsley, sage, thyme, rosemary, salt, and black pepper. Pour in the chicken or turkey broth and mix well to combine. The mixture should be moist but not soggy. Add the beaten egg to bind the mixture together. - Shape the Balls:
Using your hands, form the mixture into golf ball-sized balls (about 1.5 inches in diameter) and place them on the prepared baking sheet. You should have around 20-24 balls, depending on size. - Bake:
Lightly spray the stuffing balls with olive oil or drizzle a small amount of melted butter over each. Bake in the preheated oven for 25-30 minutes or until golden brown and cooked through. - Serve:
Allow the stuffing balls to cool for a few minutes before serving. These are perfect as a side dish for turkey, gravy, or cranberry sauce. Enjoy them warm with a drizzle of gravy or a dollop of cranberry relish.
