Ingredients:
- For the Patties:
- 1 pound fresh salmon fillets, skin removed
- 1/2 cup breadcrumbs (preferably panko for extra crispiness)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 2 cloves garlic, minced
- 1 large egg
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
- Salt and pepper, to taste
- Olive oil or butter, for frying
- For the Dipping Sauce:
- 1/2 cup Greek yogurt or sour cream
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions:
- Prepare the Salmon:
- In a food processor, pulse the salmon fillets until finely chopped, but not puréed. If you prefer, you can also chop it by hand for a chunkier texture.
- Mix Ingredients:
- In a large bowl, combine the chopped salmon, breadcrumbs, onion, celery, garlic, egg, Dijon mustard, lemon juice, dill, salt, and pepper. Mix until well combined.
- Form Patties:
- Shape the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. Place the formed patties on a plate and refrigerate for 10-15 minutes to help them hold their shape while cooking.
- Prepare the Dipping Sauce:
- In a small bowl, combine the Greek yogurt (or sour cream), dill, lemon juice, salt, and pepper. Stir until well mixed and set aside.
- Cook the Patties:
- Heat a large skillet over medium heat and add olive oil or butter. Once hot, add the salmon patties in batches, being careful not to overcrowd the pan. Cook for 4-5 minutes on each side, or until golden brown and cooked through.
- Serve:
- Remove the patties from the skillet and drain on paper towels if necessary. Serve warm with the dipping sauce and your choice of sides, such as a fresh salad or roasted vegetables.
