  2. Heat Oil: Heat about 1 inch of vegetable oil in a large skillet over medium heat.
  3. Form Pancakes: Drop spoonfuls of the potato mixture into the hot oil, forming small pancakes.
  4. Cook: Cook the pancakes for 3-4 minutes per side, or until golden brown and crispy.
  5. Drain: Remove the pancakes from the skillet with a slotted spoon and drain on paper towels.
  6. Serve: Serve the potato pancakes immediately with your favorite toppings. Some popular options include:
    • Sour cream
    • Applesauce
    • Smoked salmon
    • Chives
    • Dill
    • Capers

Tips and Variations:

  • For extra flavor, add a pinch of nutmeg or garlic powder to the potato mixture.
  • If you have time, let the grated potatoes sit for 10-15 minutes to drain excess moisture before mixing with the other ingredients.
  • You can also bake these pancakes in the oven. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and drop spoonfuls of the potato mixture onto the sheet. Bake for 20-25 minutes, or until golden brown and crispy.
