Ingredients
For the churros:
- 1 cup water
- 4 tbsp unsalted butter
- 1 tsp salt
- 1 cup all-purpose flour
- 2 large eggs
- ½ cup freshly grated Parmesan cheese
- 1 tsp garlic powder (optional)
- Vegetable oil, for frying
For the whipped feta:
- 1 cup feta cheese, crumbled
- ¼ cup cream cheese, softened
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Freshly ground black pepper, to taste
For the hot honey:
- ½ cup honey
- 1–2 tsp red pepper flakes (adjust to taste)
Instructions
- Make the hot honey:
In a small saucepan over low heat, combine honey and red pepper flakes. Warm gently for 5 minutes, then remove from heat. Let it infuse while you prepare the churros. - Make the churro dough:
In a medium saucepan, bring the water, butter, and salt to a boil. Reduce the heat to low, add the flour all at once, and stir vigorously with a wooden spoon until the dough pulls away from the sides and forms a ball (about 2–3 minutes). - Remove the dough from heat and let it cool slightly (about 5 minutes). Add eggs one at a time, mixing well after each addition until smooth and glossy. Stir in the Parmesan cheese and garlic powder (if using).
- Fry the churros:
Transfer the dough to a piping bag fitted with a large star tip. Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C). Pipe 4–5 inch lengths of dough directly into the hot oil, cutting with scissors. Fry in batches until golden brown and crisp, about 3–4 minutes per batch. Drain on paper towels. - Make the whipped feta:
In a food processor, blend the feta, cream cheese, olive oil, lemon juice, and black pepper until smooth and fluffy. Transfer to a serving bowl. - Serve:
Pile the warm savory churros on a platter, serve with whipped feta for dipping, and drizzle with warm hot honey. Enjoy immediately!
