Ingredients
For the Meatloaf:
- 1 ½ lbs ground beef (85% lean)
- ½ lb ground pork
- 1 cup breadcrumbs
- ½ cup milk
- 1 large egg
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tbsp Worcestershire sauce
- 2 tsp Dijon mustard
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp ketchup (for topping)
For the Caramelized Onion Gravy:
- 2 large onions, thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 2 cups beef broth
- 2 tbsp all-purpose flour
- 1 tsp fresh thyme leaves (or ½ tsp dried)
- ½ tsp salt (or to taste)
- ½ tsp black pepper
Instructions
- Prepare the Meatloaf:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the breadcrumbs and milk. Let sit for 2–3 minutes to soak.
- Add ground beef, ground pork, egg, diced onion, garlic, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper to the breadcrumb mixture. Mix until just combined.
- Transfer the mixture to a loaf pan or shape it into a loaf on a lined baking sheet.
- Spread ketchup evenly over the top. Bake for 50–60 minutes or until the internal temperature reaches 160°F (71°C).
- Remove from the oven and let rest for 10 minutes before slicing.
- Make the Caramelized Onion Gravy:
- While the meatloaf is baking, heat butter and olive oil in a skillet over medium heat.
- Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 20–25 minutes).
- Sprinkle flour over the onions and stir well to coat.
- Gradually whisk in the beef broth, ensuring there are no lumps. Add thyme, salt, and pepper.
- Simmer for 5–7 minutes, stirring frequently, until the gravy thickens.
- Serve:
- Slice the meatloaf and serve with a generous drizzle of caramelized onion gravy. Pair with mashed potatoes or steamed vegetables for a comforting meal.
