Savory Meatloaf with Caramelized Onion Gravy


Ingredients

For the Meatloaf:

  • 2 lbs ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup

  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cups beef broth
  • 2 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. Make the Meatloaf Mixture:
    In a large bowl, combine the ground meat, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, ketchup, salt, pepper, and thyme (if using). Mix gently with your hands or a spoon until just combined — don’t overmix or the meatloaf may become dense.
  3. Shape and Bake:

    While the meatloaf is baking, melt the butter with olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized — about 15–20 minutes.
  5. Make the Gravy:
    Sprinkle the flour over the caramelized onions and stir well for 1–2 minutes to cook out the raw flour taste. Gradually pour in the beef broth while stirring to avoid lumps. Add Worcestershire sauce, then simmer for about 5–7 minutes until the gravy thickens. Season with salt and pepper to taste.
  6. Serve:
