Savory Meatloaf with Caramelized Onion Gravy

Ingredients

For the Meatloaf:

  • 1 ½ lbs ground beef (85% lean)
  • ½ lb ground pork
  • 1 cup breadcrumbs
  • ½ cup milk
  • 1 large egg
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp ketchup (for topping)

For the Caramelized Onion Gravy:

  • 2 large onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cups beef broth
  • 2 tbsp all-purpose flour
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper

Instructions

  1. Prepare the Meatloaf:
    • Preheat your oven to 350°F (175°C).
    • In a large bowl, combine the breadcrumbs and milk. Let sit for 2–3 minutes to soak.
    • Add ground beef, ground pork, egg, diced onion, garlic, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper to the breadcrumb mixture. Mix until just combined.
    • Transfer the mixture to a loaf pan or shape it into a loaf on a lined baking sheet.
    • Spread ketchup evenly over the top. Bake for 50–60 minutes or until the internal temperature reaches 160°F (71°C).
    • Remove from the oven and let rest for 10 minutes before slicing.
  2. Make the Caramelized Onion Gravy:
    • While the meatloaf is baking, heat butter and olive oil in a skillet over medium heat.
    • Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 20–25 minutes).
    • Sprinkle flour over the onions and stir well to coat.
    • Gradually whisk in the beef broth, ensuring there are no lumps. Add thyme, salt, and pepper.
    • Simmer for 5–7 minutes, stirring frequently, until the gravy thickens.
  3. Serve:
    • Slice the meatloaf and serve with a generous drizzle of caramelized onion gravy. Pair with mashed potatoes or steamed vegetables for a comforting meal.
