Ingredients
For the Meatloaf:
- 1 ½ lbs ground beef (or a mix of beef and pork)
- 1 cup breadcrumbs
- ½ cup milk
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 egg
- 2 tbsp Worcestershire sauce
- 2 tbsp ketchup
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme (optional)
For the Caramelized Onion Gravy:
- 2 large onions, thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
Instructions
Make the Meatloaf:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the breadcrumbs and milk. Let sit for 5 minutes.
- Add the ground meat, chopped onion, garlic, egg, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix just until combined (don’t overmix).
- Shape into a loaf and place in a greased loaf pan or on a parchment-lined baking sheet.
- Bake for 50–60 minutes or until internal temperature reaches 160°F (70°C). Let rest 10 minutes before slicing.
Make the Caramelized Onion Gravy:
- While the meatloaf is baking, heat butter and olive oil in a skillet over medium heat.
- Add sliced onions and cook slowly, stirring often, until deep golden and caramelized (about 20–25 minutes).
- Sprinkle flour over the onions and stir well. Cook for 1–2 minutes.
- Slowly whisk in beef broth. Bring to a simmer and cook until thickened (5–7 minutes).
- Add Worcestershire sauce, and season with salt and pepper.
Serve:
- Slice the meatloaf and drizzle generously with warm caramelized onion gravy.
- Pairs beautifully with mashed potatoes or roasted vegetables.
