Ingredients
- 1 lb ground beef (or a mix of beef and pork)
- 1 small onion, finely chopped
- 1 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- 1/4 cup ketchup (plus extra for topping)
Ingredients for Caramelized Onion Gravy:
- 1 large onion, thinly sliced
- 2 tbsp butter
- 1 cup beef broth
- 1 tbsp flour (optional, for thickening)
- 1 tbsp Worcestershire sauce
- Salt and pepper, to taste
Instructions
- Prepare the Meatloaf:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, garlic, thyme, salt, pepper, and smoked paprika. Mix until just combined.
- Lightly oil a loaf pan or line with parchment paper. Form the meat mixture into a loaf shape and place in the prepared pan. Spread 1/4 cup of ketchup over the top of the meatloaf for a glaze.
- Bake for 50-60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C). Once done, remove from the oven and let it rest while you make the gravy.
- Make the Caramelized Onion Gravy:
- In a skillet over medium heat, melt the butter. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are golden brown and caramelized.
- If you want a thicker gravy, sprinkle 1 tbsp of flour over the onions and cook for 1 minute, stirring constantly.
- Slowly pour in the beef broth while stirring, then add Worcestershire sauce. Bring the mixture to a simmer and cook for another 5-7 minutes, until the gravy thickens. Season with salt and pepper to taste.
- Serve:
- Slice the meatloaf and serve it with the caramelized onion gravy poured over the top. Enjoy with mashed potatoes or your favorite sides!
