Ingredients
For the Meatloaf:
- 1 ½ lbs (700g) ground beef (or a mix of beef and pork)
- 1 cup breadcrumbs
- ½ cup whole milk
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 2 eggs, lightly beaten
- 2 tbsp Worcestershire sauce
- 2 tbsp ketchup
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme (optional)
For the Caramelized Onion Gravy:
- 2 large yellow onions, thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 2 cups beef broth
- 2 tbsp all-purpose flour
- 1 tbsp Worcestershire sauce
- Salt & pepper, to taste
- Optional: fresh thyme or parsley for garnish
Instructions
- Preheat Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan. - Prepare Meatloaf Mixture:
In a small bowl, soak the breadcrumbs in milk for about 5 minutes. In a large bowl, combine the ground beef, soaked breadcrumbs, chopped onion, minced garlic, eggs, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix until just combined — don’t overmix. - Shape & Bake:
Shape the mixture into a loaf shape on the prepared baking sheet (or press into a loaf pan). Bake for 50–60 minutes, or until the internal temperature reaches 160°F (70°C). - Make the Caramelized Onion Gravy:
While the meatloaf bakes, melt the butter with olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, for about 20–25 minutes until deeply golden and caramelized. - Finish the Gravy:
Sprinkle the flour over the caramelized onions and stir for 1–2 minutes to cook off the raw taste. Gradually add the beef broth while whisking to avoid lumps. Stir in Worcestershire sauce and simmer until thickened (5–8 minutes). Season with salt and pepper to taste. - Serve:
Once the meatloaf is cooked, let it rest for 5–10 minutes before slicing. Serve warm with generous spoonfuls of caramelized onion gravy on top. Garnish with fresh thyme or parsley if desired.
