For the crust:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup cold unsalted butter, cut into cubes
- 4-6 tablespoons ice water
For the filling:
- 1 pound ground beef or lamb
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
Instructions:
Make the crust:
- In a large bowl, combine the flour and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, mixing until the dough comes together.
- Divide the dough into two equal discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the filling:
- In a large skillet, brown the ground meat over medium-high heat. Drain any excess grease.
- Add the onion and garlic, and cook until softened.
- Stir in the Worcestershire sauce, thyme, salt, and pepper.
- Remove from heat and stir in the shredded cheeses.
Assemble the pie:
- Preheat oven to 400°F (200°C).
- Roll out one disc of dough on a lightly floured surface to a 12-inch circle.
- Transfer the dough to a 9-inch pie dish and trim the edges.
- Pour the meat and cheese filling into the pie crust.
- Roll out the second disc of dough and place it over the filling.
- Trim the edges of the top crust, crimp the edges to seal, and cut a few slits in the top for steam to escape.
- Brush the top crust with milk or egg wash.
Bake the pie:
- Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
