This quick and easy stir-fry is a delicious and healthy weeknight meal. The combination of savory ground beef, crisp-tender cabbage, and vibrant vegetables makes for a flavorful and satisfying dish.
Ingredients:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1/2 onion, thinly sliced
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can black beans, rinsed and drained
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 head of cabbage, shredded
- 1 bell pepper, thinly sliced (any color)
- 1 cup vegetable broth
- 2 tablespoons chopped cilantro, for garnish
- Lime wedges, for serving
Instructions:
- Brown the beef: Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Sauté vegetables: Add onion and garlic to the skillet and cook until softened, about 5 minutes.
