A quick, healthy, and flavorful stir-fry featuring tender mushrooms and crisp broccoli, perfect for a weeknight meal.
Ingredients:
- Vegetables:
- 1 pound broccoli florets
- 8 ounces mushrooms (cremini, shiitake, or your choice), sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper (optional), sliced
- Sauce:
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon oyster sauce (optional, or vegetarian oyster sauce)
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch (or arrowroot starch)
- 1/2 teaspoon sugar (or honey)
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 1/4 cup water or vegetable broth
- Other:
- 2 tablespoons vegetable oil (or peanut oil)
- Cooked rice or noodles, for serving
- Sesame seeds for garnish (optional)
- Green onions for garnish (optional)
Instructions:
- Prepare the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, sesame oil, cornstarch, sugar, red pepper flakes (if using), and water or broth. Set aside.
- Prepare the Vegetables: Wash and cut the broccoli into florets. Slice the mushrooms and onion. Mince the garlic. If using, slice the red bell pepper.
- Sauté the Aromatics: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion and sauté for 2-3 minutes, until softened. Add the minced garlic and sauté for another minute, until fragrant.
- Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook for 5-7 minutes, until they release their moisture and become tender.
- Add the Broccoli and Bell Pepper (if using): Add the broccoli florets and red bell pepper (if using) to the skillet. Stir-fry for 3-5 minutes, until the broccoli is bright green and slightly tender-crisp.
- Add the Sauce: Pour the prepared sauce into the skillet and stir well. Cook for 1-2 minutes, until the sauce thickens and coats the vegetables.
- Serve: Remove from heat and serve immediately over cooked rice or noodles. Garnish with sesame seeds and green onions, if desired.
Tips and Variations:
- For extra protein, add tofu, chicken, or shrimp to the stir-fry.
- Adjust the amount of red pepper flakes to your desired level of spiciness.
- You can use other vegetables like carrots, snap peas, or bell peppers.
- If you do not have oyster sauce, you can add a little extra soy sauce, and a very small amount of molasses to add some depth to the sauce.
- Ensure that your wok or pan is very hot before adding the vegetables, for the best stir fry texture.
- Cut all of your vegetables to a similar size, to ensure even cooking.
