Sausage Muffins

Ingredients

  • 1 lb breakfast sausage (pork or turkey)
  • 1 cup shredded cheddar cheese
  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup milk
  • 2 large eggs
  • 2 tablespoons melted butter or oil
  • Optional: chopped green onions or bell peppers for extra flavor

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. Cook sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease and let it cool slightly.
  3. Mix dry ingredients in a large bowl: flour, baking powder, salt, and pepper.
  4. Whisk wet ingredients in another bowl: milk, eggs, and melted butter.
  5. Combine everything: Pour the wet ingredients into the dry, then stir in the cooked sausage and shredded cheese. Add optional veggies if using.
  6. Spoon the mixture into the muffin tin, filling each cup about ¾ full.
  7. Bake for 20–25 minutes, or until golden brown and a toothpick comes out clean.
  8. Cool slightly and enjoy warm or at room temperature. Perfect for breakfast or a snack!
