Ingredients

  • 4 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 8 slices of bread (preferably thick, like Texas toast)
  • 8 cooked sausage links
  • 1 tbsp butter (for cooking)
  • Maple syrup (for serving)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Prepare the Sausage: Cook the sausage links according to package instructions (pan-fry, bake, or grill) until fully cooked. Set aside.
  2. Make the French Toast Batter: In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon until fully combined.
  3. Assemble the Roll-Ups:
    • Take a slice of bread and cut off the crusts.
    • Flatten the bread using a rolling pin.
    • Place a cooked sausage link at one end of the slice and roll the bread tightly around the sausage.
  4. Dip in Batter: Dip each roll-up in the egg mixture, making sure it’s fully coated.
  5. Cook the Roll-Ups: Heat a skillet or griddle over medium heat and add butter. Once melted, place the roll-ups in the skillet and cook for about 2-3 minutes on each side, or until golden brown.
