Ingredients

  • 1 pound breakfast sausage (or your favorite sausage)
  • 6 large eggs
  • 1 cup shredded cheddar cheese

  • 1/2 cup spinach, chopped (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with non-stick cooking spray or line with muffin liners.
  2. In a skillet over medium heat, cook the breakfast sausage, breaking it into crumbles as it cooks. Once browned and fully cooked, drain any excess grease and set aside.
  3. In a large bowl, whisk the eggs. Add the shredded cheese, diced bell peppers, onions, spinach (if using), salt, pepper, and garlic powder. Stir in the cooked sausage.
  4. Spoon the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
