Sausage and Potato Casserole

Ingredients

  • 1 lb sausage (Italian, breakfast, or any of your choice)
  • 4 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Olive oil for greasing

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. Cook sausage: In a large skillet, cook the sausage over medium heat until browned, breaking it apart as it cooks. Remove from heat and set aside.
  3. Prepare potatoes: In a pot of boiling salted water, cook the cubed potatoes for about 8-10 minutes, or until fork-tender. Drain and set aside.
  4. Sauté vegetables: In the same skillet, sauté the onion, bell pepper, and garlic over medium heat until softened, about 5 minutes.
  5. Make the sauce: In a bowl, mix together the heavy cream, milk, thyme, paprika, salt, and pepper.
  6. Assemble casserole: In the greased baking dish, layer the cooked potatoes, sausage, sautéed vegetables, and shredded cheddar cheese. Pour the sauce evenly over the top.
  7. Bake: Cover the dish with foil and bake for 25-30 minutes. Then remove the foil and bake for another 10 minutes to allow the cheese to melt and brown slightly.
  8. Serve: Let the casserole cool for a few minutes before serving.
