Ingredients
- 1 lb sausage (Italian, breakfast, or any of your choice)
- 4 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1/2 cup milk
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- Olive oil for greasing
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
- Cook sausage: In a large skillet, cook the sausage over medium heat until browned, breaking it apart as it cooks. Remove from heat and set aside.
- Prepare potatoes: In a pot of boiling salted water, cook the cubed potatoes for about 8-10 minutes, or until fork-tender. Drain and set aside.
- Sauté vegetables: In the same skillet, sauté the onion, bell pepper, and garlic over medium heat until softened, about 5 minutes.
- Make the sauce: In a bowl, mix together the heavy cream, milk, thyme, paprika, salt, and pepper.
- Assemble casserole: In the greased baking dish, layer the cooked potatoes, sausage, sautéed vegetables, and shredded cheddar cheese. Pour the sauce evenly over the top.
- Bake: Cover the dish with foil and bake for 25-30 minutes. Then remove the foil and bake for another 10 minutes to allow the cheese to melt and brown slightly.
- Serve: Let the casserole cool for a few minutes before serving.
