  • 1 pre-made pie crust or homemade crust
  • 1/2 cup (1 stick) unsalted butter
  • 3/4 cup granulated sugar
  • 1/2 tsp fine sea salt
  • 3/4 cup honey (mild or wildflower honey works best)
  • 3 large eggs
  • 1/2 cup heavy cream
  • 2 tbsp white vinegar or apple cider vinegar
  • 1 tsp pure vanilla extract

Instruction

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Place your pie crust into a 9-inch pie dish and crimp the edges. Chill the crust while preparing the filling.
  2. Prepare Butter Mixture: In a small saucepan over medium heat, melt the butter until it turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly.
  3. Make Filling: In a large mixing bowl, whisk together the granulated sugar, sea salt, and honey. Add the eggs, one at a time, whisking until fully incorporated.
  4. Combine Ingredients: Slowly whisk in the browned butter, heavy cream, vinegar, and vanilla extract until smooth.
  5. Fill Pie Crust: Pour the honey mixture into the chilled pie crust.
  6. Bake: Place the pie in the oven and bake for 45–55 minutes, or until the filling is set around the edges but still slightly jiggly in the center.
  7. Cool and Garnish: Remove the pie from the oven and allow it to cool completely on a wire rack. Sprinkle the top with flaky sea salt before serving.
