Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 cup milk (room temperature)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the egg and beat well, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients.
  6. Mix until just combined – do not overmix.
  7. Spoon the batter into cupcake liners, filling each about 2/3 full.
  8. Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool completely on a wire rack before serving or frosting.
