- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/2 cup milk (room temperature)
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- 1 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add the egg and beat well, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients.
- Mix until just combined – do not overmix.
- Spoon the batter into cupcake liners, filling each about 2/3 full.
- Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely on a wire rack before serving or frosting.
