Rotel Tacos

Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 can Rotel (diced tomatoes with green chilies), drained
  • 1 packet taco seasoning (or homemade blend)
  • 1 small onion, diced
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • Taco shells or flour tortillas
  • Optional toppings: shredded lettuce, sour cream, salsa, jalapeños, avocado, hot sauce

Instructions

  1. In a skillet over medium heat, cook the ground beef and onion until meat is browned and onion is soft. Drain excess grease.
  2. Stir in taco seasoning and Rotel. Simmer for 5–7 minutes until mixture thickens slightly.
