Rotel Tacos

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 can (10 oz) Rotel diced tomatoes & green chilies (undrained)
  • 1 packet taco seasoning mix
  • 8–10 taco shells (hard or soft)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes (optional)
  • 1/2 cup sour cream (optional)
  • 2 tbsp cooking oil (if needed)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula. Drain excess fat if needed.
  2. Stir in the taco seasoning and the can of Rotel (including juice).
  3. Simmer for about 5–7 minutes, stirring occasionally, until the mixture thickens and flavors blend.
  4. Warm taco shells according to package directions.
  5. Spoon the Rotel beef mixture into each taco shell.
  6. Top with shredded cheese, lettuce, tomatoes, and sour cream (or your favorite toppings).
  7. Serve immediately and enjoy!
