Ingredients
- 1 lb ground beef (or ground turkey)
- 1 can (10 oz) Rotel diced tomatoes & green chilies (undrained)
- 1 packet taco seasoning mix
- 8–10 taco shells (hard or soft)
- 1 cup shredded cheddar or Mexican blend cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes (optional)
- 1/2 cup sour cream (optional)
- 2 tbsp cooking oil (if needed)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula. Drain excess fat if needed.
- Stir in the taco seasoning and the can of Rotel (including juice).
- Simmer for about 5–7 minutes, stirring occasionally, until the mixture thickens and flavors blend.
- Warm taco shells according to package directions.
- Spoon the Rotel beef mixture into each taco shell.
- Top with shredded cheese, lettuce, tomatoes, and sour cream (or your favorite toppings).
- Serve immediately and enjoy!
