Roasted Sweet Potato Recipe

These roasted sweet potatoes are a simple and versatile side dish. They’re naturally sweet, slightly caramelized, and can be seasoned in many ways.

Ingredients:

  • 2 medium sweet potatoes (about 1.5 pounds total)
  • 2 tablespoons olive oil (or melted coconut oil)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Optional seasonings:
    • 1/2 teaspoon garlic powder  
    • 1/2 teaspoon paprika
    • 1/4 teaspoon cinnamon
    • 1 tablespoon maple syrup or honey (for a sweeter glaze)
    • Fresh rosemary or thyme sprigs

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).  
  2. Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly. Peel them if desired (leaving the skin on provides extra fiber and nutrients). Cut the sweet potatoes into roughly 1-inch cubes.
  3. Season the Sweet Potatoes: In a large bowl, toss the sweet potato cubes with olive oil, salt, pepper, and any optional seasonings you’re using. Make sure the potatoes are evenly coated.  
  4. Arrange on a Baking Sheet: Spread the sweet potato cubes in a single layer on a baking sheet. Ensure they’re not overcrowded, as this will prevent them from browning properly.
  5. Roast: Roast for 25-35 minutes, or until the sweet potatoes are tender and the edges are slightly caramelized. Flip them halfway through the cooking time to ensure even browning.  
  6. Optional Glaze: If you’re using maple syrup or honey, drizzle it over the sweet potatoes during the last 5 minutes of roasting.
  7. Serve: Remove from the oven and let them cool slightly. Garnish with fresh herbs if desired. Serve warm.
